Broiled Salmon and Lemon Butter
Ingredients
  1. 2 lbs. (4 - 6 oz. pieces) fresh salmon fillets
  2. 1/4 cup melted butter
  3. 2 T. lemon juice
  4. 2 T. chopped parsley
  5. 1/4 t. crumbled dill, rosemary or marjoram
  6. 1/4 t. salt
  7. 1/8 t. coarsley ground pepper

Remove the pinbones from the salmon fillets. Place the salmon fillets on a foil lined broiler pan. Sprinkle salt and pepper on the fish. Mix the remaining ingredients in a bowl to create a baste for the salmon fillets. Broil the salmon (about 4" from the flame) for about 10 minutes per inch of fillet thickness. Do not turn the fish. Baste the salmon fillets several times while cooking. Makes 4 servings.
